Black Walnut Apricot Cookies (Raw)

Yum… don’t you just love cookies that don’t need “cooked”?  Like most raw cookies, these little  gems are ridiculously easy to make and good for you…  holiday bonus!  They are not overly sweet, like many of the awesome raw cookies that contain dates.  They are actually a little bit tart.  But, they are oh so scrumptious.  Definitely a nice change of pace for the ol’ holiday cookie tray.

 

Black Walnut Apricot Cookies

Ingredients:

  • 3 cups dried apricots
  • 1 cup black walnuts
  • 2 cups unsweetened dried coconut, plus about 1/3 cup extra to roll the cookies in
  • 4-5 hefty squirts of agave

Directions:

Combine all ingredients (set aside 1/3 cup coconut) in food processor and process until pretty well chopped up.

Once combined, wash hands extra super duper well, and thoroughly dry them.  Next, roll the mixture  into walnut sized balls.  Take the balls and then roll into the extra coconut.

Flatten using the bottom of a measuring cup or another flat object, and then shape into perfect little cookies.

Sprinkle a little more coconut on top.
