Fennel Seed Stars

Fennel Seed Stars

I really feel like Rainbow Brite would be right at home in the above photograph. And that makes me smile.

Do you know what else makes me smile? Candy coated fennel seeds.

These slightly crunchy Fennel Seed Stars are a perfect vehicle for those little candies… second only to eating them straight from the bag. ♥

Fennel Seed Stars ~ Vegan & Gluten Free

makes about 30 cookies

Ingredients:

  • 1 cup vegan granulated sugar
  • 1 cup vegan margarine
  • 2 tsp vanilla extract
  • 1 tbsp flaxseed meal mixed with 2 tbsp water
  • 1 cup sorghum flour
  • 1 cup chickpea flour
  • 1 cup potato starch
  • 1 1/2 tsp xanthan gum
  • candy coated fennel seeds
  • extra sparkly vegan sprinkles (optional)

Directions:

Preheat oven to 400 °F.

Cream together margarine, sugar, and vanilla extract. Add in prepared flaxseed meal.

In separate bowl, sift together sorghum flour, chickpea flour, xanthan gum and potato starch.  Mix on medium low speed with creamed margarine mixture until stiff dough forms. Pat into a disk and chill in freezer for a few minutes until very cold. You can also chill the dough in the fridge for about 2-3 hours.

Roll cookies out onto lightly (sorghum) floured surface until about 1/4-1/2 inch thick. Cut out cookies using star shaped cookie cutters.

Decorate with candy coated fennel seeds. I had to actually meticulously “place” mine on the cookies… and this was the most intense part of making these guys. I also sprinkled half of them with some cute vegan sparkle edible glitter stuff.

Bake in preheated oven for 7-8 minutes. Less cooking time will be needed for thinner cookies.

Yum!

    Those cookies are sooo pretty!

Maybe they’ll even convince me to like fennel seeds. I had a bad experience with them at an Indian restaurant once. Too big of a handful. No where to spit.

    LOL!

PS I’m adding you to my blog roll – it’s a mystery why you aren’t already there :)

  3. Rainbow Brite ROCKS! And so do these cookies. I LOVE THEM.

  6. Oh yum! Where did you find candy coated fennel seeds?

I got these at an Indian specialty market… I have also had luck finding them to purchase in bags at the pay counter at most Indian restaurants we go to when we dine out (best dessert ever!). They are a special treat that’s semi-hard to find, but man, are they ever worth it!

Those look great! I usually make anise cookies for the holidays, but much prefer the taste of fennel… so I should give this a try.
