Undeniably, nog is one of my most favorite things about winter. And even though I appreciate the prepackaged vegan nogs that are available this time of year, I find them somewhat lacking in flavor and in texture. So, I opt to make my own… and keep the other stuff around for a dire emergency.
Yes, I do like nog that much.
Here’s a simple pumpkin nog recipe that satisfies my most intense winter night cravings. Delicious with or without booze. :)
Pumpkin Nog ~ Vegan
Ingredients:
Directions:
Combine all ingredients but non-dairy milk into food processor or blender. Add in almond milk and blend again.
Serve hot or cold.
If I were to use actual eggs instead of the block of silken tofu, what would the ratio of eggs be to the block?

You’ve done it again, haven’t you? As I was ogling the recipe I thought, gee, I’ve got about that much orphaned pumpkin puree in the fridge right now. But… since I can’t do soy I’m wondering what the consistency is exactly. Could I like soak some almonds or cashews and grind them up do you think? I’m not familiar with the different tofus since I’ve been allergic to soy since forever. Well, practicalities aside (and calories) I’ve got a challenge for you. I know you don’t do food challenges, still, would you make me a gfefcfsf pumpkin cinnamon roll? I think you should put it up for a vote. You can kill me later. BTW I absolutely love this blog in case you didn’t know.
Hi Laurel- okay, you have convinced me… I’ll make you the darn rolls! So, let me get this straight : gluten free, egg free?, casein free?, soy free pumpkin cinnamon rolls…. yeah? I like this challenge- sounds deeeelish. :)
As for the nog… I would think some of the soaked cashews or almonds would work pretty well. Or, if you use enough spice to mask the flavor, I bet a banana or two would thicken it up quite nicely as well- and possibly leave you with a smoother nog than the soaked nuts.

Have I told you lately that you’re my hero?heroine?super hero? well, you get the picture. I’ve been wanting those dad gummed pumpkin cinnamon rolls for two years but I’m tired of eating entire batches of disgusting, indigestible disasters and all on my lonesome all the while thinking I should have just made cookies. I keep telling myself the birds will eat it but it’s expensive bird food (grin). BTW how do I get those little smiley faces on the comments page? Actually, being me I need devil and piggy faces more.

Allyson – do you know how much money you’re going to save me?!?!? dan drinks the hell outta that silk pumpkin spice stuff and their nog. thank you! i kinda feel like a dummy for never thinking to make it myself, and i totally agree that the texture and flavors of the store bought stuff is kinda weak. i can’t wait to give this a whirl – and i’ll be sure to report back, too!
Oh, man. I would like a glass of this, along with some of those fennel seed star cookies, and I’m pretty sure I’ll be happy forever. I’d love to try this with full-fat coconut milk…I bet it would be incredibly rich!

Ooh, that looks like it’s thick and decadent. I had never actually had any kind of nog until I tried the Silk stuff last year, which I thought was delicious! But maybe it’s time to try my hand at homemade!
