Summer Pasta-less Salad

Since the weather outside has been too hot for even this heat junkie to handle — with temperatures reaching close to 100 °F — I’ve been avoiding my oven and stove-top and instead looking to water-packed raw fruits and veggies to get me through these sweltering days of summer.

This light summer salad is reminiscent of the pasta salad I used to enjoy as a wee one… except I left out the heavy pasta and replaced it with my fave go-to summer staple: zucchini “noodles”. If you don’t have a spiralizer, a vegetable peeler works great too.




  • 4 cups spiralized zucchini, unpeeled (about 2 medium zukes)
  • 2 cups chopped fresh tomatoes
  • 1 cup diced green pepper
  • 1 cucumber, seeds removed and diced
  • 2 peaches, chopped
  • 1 tbsp minced fresh garden herbs (oregano, sage, basil, mint)


  • 1/4 cup olive oil
  • 1 tbsp balsamic vinegar
  • 3 tbsp granulated sugar
  • 1/4 cup lemon juice
  • 1 tsp sea salt
  • 1/4 cup nutritional yeast
  • 2 tsp Italian seasoning spice mix (unsalted, if “salted” reduce salt amount called for above and modify to taste)
  • 1/4 cup water


Chop up spiralized zucchini into bite sized pieces and salt lightly.  Transfer to large bowl and toss with remaining salad ingredients.

Whisk all dressing ingredients together into small bowl until well combined. Drizzle over salad ingredients to coat well. Let rest in fridge for about 30 minutes, and then stir once again to coat.

Serve cold or at room temp.

Keeps well up to a day or so. Perfect with a tall glass of lemonade.

    I just found your website and made this delicious salad for dinner last night! It was amazing and just what I wanted. I loved the idea of the peaches and found some great ones to use. The dressing was very good, though there was a lot. I will use the dressing recipe for other salads as well. I do not have a spiralizer but do have a mandoline, which I used on the 3.5mm shredder, and that worked great! Thanks for the recipe; I will be visiting often.

      • We did! I loved how fresh it tasted and the combination of the sweet peach with the crunchy veggies. Everything but the pepper and the peaches were from my garden. I think I’d make just a little less sauce next time. I *loved* the flavor but found it a little hard to serve since it was pretty liquidy. That said, I wanted to drink the sauce so maybe next time I’ll make the sauce this amount, and then drain it off and drink it ;)

    Hello – How many servings does this yield? 1/4 cup olive oil seems like awful lot of fat, is there a fat-free substitution for the dressing?

      Hey Frankie. This makes a lot of salad– at least 6 generous servings. Not sure about any substitutes for the olive oil for the dressing that would taste the same, but you’re free to try whatever strikes your fancy. I personally love olive oil in my salads, but I’m hardly a “fat free” eater. :)

      • 6?! I can see that for the dressing…but the actual salad? I could eat that in 2 or 3 go’s ;)…sigh, I think I eat too many veggies…

          :) haha! It does make a huge mixing sized bowlful, but yes, for intense veggie lovers… maybe 3 servings? ;) When I made this, I had two bowls, my hubs had two bowls and my kids ate the rest. Eating too many veggies is a wonderful problem to have! <3
