‘Meatless’ giveaway

Today I’m excited to share with you a new book from the kitchen of one of my culinary heroes, Martha Stewart. Her latest book, Meatless, is quite unlike her typical tomes in that the entire book revolves around–as the title suggests–meat free recipes. And, even though every single recipe isn’t solely plant based, I can confidently say that most of the recipes within the pages of this beautif

ully illustrated book are vegan (even marked with a handy “V”), and pretty much all of the non-vegan recipes can easily be made vegan with non-dairy substitutions. There are also a ton of gluten-free recipes, also clearly labeled for your gastronomical enjoyment.

Some of you may feel underwhelmed that this book isn’t entirely plant based, but as a longtime (diehard!) fan of Martha Stewart, and with her obvious influence that has reached the homes of millions of people, I find this to be an incredibly positive step in the right direction. In fact, I’m downright giddy about it.

So, today I am featuring one of the recipes from the book as well as offering a copy of Meatless to one lucky reader. Avocado Salad with Bell Pepper and Tomatoes 

(Recipe provided and reposted with permission from Clarkson/Potter Publishers)

Avocado shells make handy vessels for a bright salad made with the scooped-out flesh. Lime juice, garlic, and a pinch of cayenne flavor the dressing. The salad can also be served as a topping for quesadillas or as a fresh filling for tacos.

Serves 1

  • 1 teaspoon extra-virgin olive oil
  • Juice of ½ lime
  • 1 small garlic clove, minced
  • Pinch of cayenne pepper
  • Coarse salt
  • 1 firm, ripe avocado, halved and pitted
  • ½ yellow bell pepper, ribs and seeds removed, diced
  • 6 cherry tomatoes, halved
  • 1 scallion, trimmed and thinly sliced
  • 1 tablespoon chopped fresh cilantro leaves, plus whole leaves for garnish

 

1. In a small bowl, whisk together olive oil, lime juice, garlic, and cayenne. Season with salt.

2. Scoop out flesh from avocado halves, reserving shells, and chop. Transfer to a bowl and add bell pepper, tomatoes, scallion, and chopped cilantro.

3. Drizzle with dressing and season with salt. Gently stir to combine. Spoon mixture into reserved shells.

Garnish with whole cilantro leaves and serve immediately.

    Love Martha! The news of this book being released somehow slipped by me.
    My favorite meatless dish is veggie pho! There is a place in DC that makes their broth from fuji apples. It’s unbelievably good.

    It’s hard to pick a favorite dish… I have lots of different cravings throughout the year. I will say broadly that I really enjoy a wide variety of vegetable soups and stews, including curries, tagines, chilies, dals, etc. I seem to be on a lentil and chickpea kick lately…

    It makes my day when I see news like that – more and more people shifting to an plant based diet! I have done it very recently though, and that was something I would not consider a few years ago!

    Difficult to pick just one favourite dish, so I will go for the one I’ll be having tonight: beetroot risotto, one of the favourites here.

    My favourite meatless dinner has got to be butternut squash and black bean galette. Mmmm. I’m pretty giddy that Martha (aren’t we all on a first name basis with her?) has devoted an entire book to meat free cooking. It is a step in the right direction that I really hope some of her flock embrace. We, and our planet, need this!

    My favorite meatless dish has to be Portabello Stroganoff. It evokes memories of my mother’s stroganoff when I was a kid- but in a new and improved (and cruelty-free) way. Hints of red wine, fresh thyme, and nutritional yeast make it so so good.

    our favorite vegan meal is lasagna using a white bean tofu basil “cheese ” layer and a tvp/red lentil /green olive tomato sauce. Cashew “cheese” on the top before baking. YUM!

    Very cool, I love that this is becoming so main-stream that even Martha Stewart is doing it. I have a lot of fave meatless dishes, like practically everything, but i’d say one of my all time faves is a good red lentil, cashew burger and a massaged kale salad! YUM! Would love to win!

    yay! i’m excited about this book and would love a copy! my favorite dish is kind of ridiculous, but it’s true- massaged kale salad with avocado, hemp seeds, walnuts, mango, and spring mix.

  41. The avocado salad sounds just wonderful. I eat avocados nearly every day, and this would be a great way to change up my normal avocado dishes. My favorite meatless meal is a plate of roasted sweet potatoes, cauliflower, and broccoli with some quinoa or beans and a little bowl of maple mustard for dipping!

    I’m a diehard Martha fan, so I would love this book! It’s hard to pick just one fave meatless dish, but I’m going with nachos! They’re so versatile and delicious.

  43. My favorite never-fail, go-to dessert when we have company coming? Martha Stewart’s Apple Pie Cake. You can easily swap out the butter for a vegan substitute and it is DELICIOUS.
