‘Meatless’ giveaway

Today I’m excited to share with you a new book from the kitchen of one of my culinary heroes, Martha Stewart. Her latest book, Meatless, is quite unlike her typical tomes in that the entire book revolves around–as the title suggests–meat free recipes. And, even though every single recipe isn’t solely plant based, I can confidently say that most of the recipes within the pages of this beautif

ully illustrated book are vegan (even marked with a handy “V”), and pretty much all of the non-vegan recipes can easily be made vegan with non-dairy substitutions. There are also a ton of gluten-free recipes, also clearly labeled for your gastronomical enjoyment.

Some of you may feel underwhelmed that this book isn’t entirely plant based, but as a longtime (diehard!) fan of Martha Stewart, and with her obvious influence that has reached the homes of millions of people, I find this to be an incredibly positive step in the right direction. In fact, I’m downright giddy about it.

So, today I am featuring one of the recipes from the book as well as offering a copy of Meatless to one lucky reader. Avocado Salad with Bell Pepper and Tomatoes 

(Recipe provided and reposted with permission from Clarkson/Potter Publishers)

Avocado shells make handy vessels for a bright salad made with the scooped-out flesh. Lime juice, garlic, and a pinch of cayenne flavor the dressing. The salad can also be served as a topping for quesadillas or as a fresh filling for tacos.

Serves 1

  • 1 teaspoon extra-virgin olive oil
  • Juice of ½ lime
  • 1 small garlic clove, minced
  • Pinch of cayenne pepper
  • Coarse salt
  • 1 firm, ripe avocado, halved and pitted
  • ½ yellow bell pepper, ribs and seeds removed, diced
  • 6 cherry tomatoes, halved
  • 1 scallion, trimmed and thinly sliced
  • 1 tablespoon chopped fresh cilantro leaves, plus whole leaves for garnish

 

1. In a small bowl, whisk together olive oil, lime juice, garlic, and cayenne. Season with salt.

2. Scoop out flesh from avocado halves, reserving shells, and chop. Transfer to a bowl and add bell pepper, tomatoes, scallion, and chopped cilantro.

3. Drizzle with dressing and season with salt. Gently stir to combine. Spoon mixture into reserved shells.

Garnish with whole cilantro leaves and serve immediately.

    So tough to pick a favorite! I’d say, beer battered avocado tacos w/slaw and cilantro cream. I found the recipe online from Seabirds food truck, and it’s been a fave ever since, even my kids love them!

    Oh wow! This is exciting – not only the book itself, but that she has a book moving towards plant-based!

    My favorite meatless meal is homemade black bean burgers with chipotle “mayo” and a side of steamed kale. Mmmm!

    I would really love a copy of Martha’s book. Ironically, my mother in law was just saying to me tonight that she didn’t think Martha Stewart would ever put out a meatless recipe book; so I would really love to cook a recipe for her from this book! When I was pregnant, all I wanted was a falafel wrap, especially one with yummy cabbage and carrot salad and some lettuce in it. I had to have them at least 5 times a week and sometimes a few times a day. Now that I’m breastfeeding, I still have a falafel wrap fix, but I’m only eating them about twice a week now. So I’m going to say that my favorite meatless dish is a falafel wrap (and I’m guessing it is my little baby girl’s favorite dish too, as I think she is the one that was always indirectly asking me for it). ;-)

    How awesome of Martha Stewart! I love her books and glad she has a 1/2-hr show on PBS now because we don’t have cable. I’d love this book! Definitely a good lentil loaf with an onion or mushroom gravy.

    I started a plant-based diet in November (and avoid gluten – hurts my bod). So I am fairly new to Meatless Mondays, Tuesdays, Wednesdays, Thursdays, Fridays, Saturdays and Sundays. However… as a Newbie, I can tell you I LOVE LOVE LOVE a Portbella Mushroom on the grill with fresh corn and black bean salsa. This book could expand my horizons while shrinking my waistline!

    I love Martha and have been converting her recipes to vegan/gluten free facsimiles for years. This time the hard part will be done for me–love it! My favorite vegan dishes: lemon poppyseed cake w/lemon curd topping; baked falafel with tangy tahini dressing on homemade pocket bread; vegan strawberry-lemon cheezcake; and tofu t’key based with soy/sake and stuffed with wild rice w/walnuts, celery, shitake mushroom dressing and vegan gravy. Love you, Martha!

    I would love this cookbook! My favorite meatless dish right now is anything with roasted cauliflower in it. I have been taking roasted cauliflower and adding it to soups, salads and making tacos out of it. I also eat it straight out of the pan.

  36. Awesome! Well right now I’m eating sweet potatoes roasted with curry powder and coconut oil, with kale and chickpeas, and it’s pretty darn good.

    I agree with you: it’s always great to see something so mainstream make a step in the right direction!
    One of my (many) favorite meatless dishes has to be the quick, easy and yummy chickpea curry we make once in a while. Flavorful and warming: it’s perfect for this time of the year!

    cool! what a nice giveaway. I’ve had good luck with Martha recipes (baking and such) over the years. It’s hard to say what my favorite meatless meal is – I guess I’d say anything new that I’ve never made before!

    With Martha’s influence, this book is a positive step! My favorite meatless meal, well they’re all meatless now. I guess I’d pick Black Bean Enchiladas. Though hummus is a close second…

    Gah! I love martha too and only recently heard about this book! I’d loooove to snag a copy. my favorite meatless dish (besides a salad) is Isa’s chickpea cutlets. They are so delicious. Thanks!
