Today I’m excited to share with you a new book from the kitchen of one of my culinary heroes, Martha Stewart. Her latest book, Meatless, is quite unlike her typical tomes in that the entire book revolves around–as the title suggests–meat free recipes. And, even though every single recipe isn’t solely plant based, I can confidently say that most of the recipes within the pages of this beautif

ully illustrated book are vegan (even marked with a handy “V”), and pretty much all of the non-vegan recipes can easily be made vegan with non-dairy substitutions. There are also a ton of gluten-free recipes, also clearly labeled for your gastronomical enjoyment.

Some of you may feel underwhelmed that this book isn’t entirely plant based, but as a longtime (diehard!) fan of Martha Stewart, and with her obvious influence that has reached the homes of millions of people, I find this to be an incredibly positive step in the right direction. In fact, I’m downright giddy about it.

So, today I am featuring one of the recipes from the book as well as offering a copy of Meatless to one lucky reader. Avocado Salad with Bell Pepper and Tomatoes 

(Recipe provided and reposted with permission from Clarkson/Potter Publishers)

Avocado shells make handy vessels for a bright salad made with the scooped-out flesh. Lime juice, garlic, and a pinch of cayenne flavor the dressing. The salad can also be served as a topping for quesadillas or as a fresh filling for tacos.

Serves 1

  • 1 teaspoon extra-virgin olive oil
  • Juice of ½ lime
  • 1 small garlic clove, minced
  • Pinch of cayenne pepper
  • Coarse salt
  • 1 firm, ripe avocado, halved and pitted
  • ½ yellow bell pepper, ribs and seeds removed, diced
  • 6 cherry tomatoes, halved
  • 1 scallion, trimmed and thinly sliced
  • 1 tablespoon chopped fresh cilantro leaves, plus whole leaves for garnish

 

1. In a small bowl, whisk together olive oil, lime juice, garlic, and cayenne. Season with salt.

2. Scoop out flesh from avocado halves, reserving shells, and chop. Transfer to a bowl and add bell pepper, tomatoes, scallion, and chopped cilantro.

3. Drizzle with dressing and season with salt. Gently stir to combine. Spoon mixture into reserved shells.

Garnish with whole cilantro leaves and serve immediately.

    Heh, it’s kinda funny to pick my favorite meatless meal since I’m vegan – all of my meals are meatless! But I do have one favorite that has held up through my omni, vegetarian, and vegan stages: spicy red bell pepper & tomato soup with grilled cheese sandwiches (w/vegan cheese now).

    I love Martha!! And I’m a newbie to this whole vegan/vegetarian “thing”*:)…It’s been a long journey for me…figuring out that I feel so much better…SO much better without meat and dairy. It seems I’ve always known this. As a kid …I HATED meat. But being raised on an Iowa farm….meat was what was for dinner! I hated milk as well…but I remember being the last one at the lunch table at school, because I hadn’t finished milk yet!!
    So…finally at age 41….I’m getting it: I’ve always been Vegan at heart!!*:))I But I don’t know how to do anything fancy….yet! I love roasted veggies and brown rice….or brussels in coconut oil. Those are my go-to meals!!*:)I

    The recipe featured on the cover of Super Natural Everyday with potatoes, white beans, shallots and cabbage. I’ve done it tons of different ways changing up the greens, beans, or root vegetable used, and its been yummy every time.

    Also my meals are all meatless, so it is hard to pick a favorite. Just became vegan last month, was vegetarian for many years. Guess my favorite right now are fish taco’s without the fish. Our family was just discussing the other night that we need to rename our all time favorite. Guess they should be called vegi tacos. We usually fill them with coleslaw, mango salsa, black beans, cilantro, avacado and hot sauce. It’s like having a party in your mouth!!

    As boring as it is, my favorite meatless dish is salad the size of my head with everything in it, coated with a sweet and tangy dressing like Oh She Glows lemon-tahini dressing, or Powercakes’ creamy tahini nooch sauce. Salads are just so versatile, no cooking/waiting required, just chop up whatever, throw it in a bowl and feast! You can get all fancy with your veggies, even do a roasted veggie salad, or it can be as simple as lettuce and greens with some beans, nuts or seeds thrown in. Love me a good salad, all day, every day :D

    My favorite vegan dish is lasagna, with my Nana’s marinara sauce recipe.

    My favorite meatless dish is any kind of salad. I could eat salad every single day and I would be totally happy! Quinoa salad, spinach salad, with edamame, palm hearts, any nuts, marinated tofu… The possibilities are infinite! And I always make my own dressing. My favorite is tamari sauce with lots of garlic, olive oil and vinegar! And every salad should have avocado in it! :-)
