This simple dessert is bound to put a person in the mood for sweaters and bonfires. Serve with a mug of hot cider and embrace the chill in the air.
For those of you in warmer climates- this rice pudding is also delicious served cold with a spot of thick coconut cream.
Autumn Rice Pudding
Ingredients:
Directions:
Cook brown rice according to package directions. It should yield about 3 cups of cooked brown rice. While rice is cooking, begin preparing the rest of the ingredients; chop apples, smash pecans, etc.
Over medium heat, warm coconut oil until liquidy. Add chopped apples, pecans, nutmeg, cinnamon, garam masala, and 1/4 tsp salt. Continue to cook over medium heat, stirring as to not let the mixture burn. Cook about 3-5 minutes, or until apples soften and pecans become fragrant.
In medium sized bowl, combine cold almond milk with cornstarch and vanilla. Whisk together until well combined and no lumps are visible.
Once rice is finished cooking, stir in sugar and almond milk/cornstarch mixture. Cook over medium heat about 2 minutes, or until thick. Add 1/4 tsp more salt. Fold in apples and pecans.
Can be served warm or chilled.

I love your addition of garam masala to the spices! I adore playing with “savoury” flavours like that. I’ll have to make this with the coconut cream because – hurrah! – I finally get a summer here in Australia!
This sounds amazing and I love the idea of adding garam masala. Temps here are still in the upper 80’s but I’m bookmarking this for the first fall day.
i just made this and yum, except i used only 1/2 cup sugar and still think it could have been less. pretty sweet, but oh so yummy. my non-vegan son loved it!

I went through a phase when I was in high school where I was obsessed with rice pudding. I got sick of it after a while and don’t think I’ve had it since then. I think I need to resurrect my love of rice pudding with this recipe. It looks so good!
Okay, I see I’ll have to try this–anything to get me in the mood for sweaters! Besides, I think rice pudding is my all-time favorite comfort dessert. Looks fabulous!

A few months ago, my mom was complaining about there not being anything substantial enough for her to eat for breakfast as a GF person. I reminded her that she could make rice pudding and, now, here you are posting a delicious-looking GF rice pudding recipe! I already sent her the link. :)
