This Valentine’s Day, treat your loved one with a gift that truly comes from the heart: homemade cookies! These heart-shaped sweets are easy to whip up (a perfect solution for last minute gift giving) and taste absolutely divine. Made with hemp, cacao nibs, and cashews, and chocolate, these cookies just may sweep your loved one off his or her feet.
Chocolate Heart Cookies
- 1 cup raw cashews
- 1/4 cup hemp hearts
- 2 tablespoons cacao nibs
- 7 Medjool dates, pitted
- 1/4 teaspoon salt
- 2 teaspoons vanilla extract
- 1 1/2 teaspoons ground chia seeds
- 1 tablespoon water
- 1 cup nondairy chocolate chips, white or dark or both!
Preheat oven to 300 °F.
Place the cashews, hemp hearts, cacao nibs, and dates into a food processor. Pulse until evenly crumbly, and finely ground so that it sticks together easily when squeezed between your fingers. In a small bowl, combine the salt, vanilla extract, ground chia seeds, and water and let rest 5 minutes, until gelled.
Transfer the ground cashew mixture into a large bowl and mix well with the prepared chia seed mixture until a slightly sticky dough forms. Pat the dough into a disk and place in between two sheets of plastic wrap. Roll to about 1/4 inch thick and cut out using a heart shaped (or your favorite shape) cookie cutter. Transfer to a parchment or silicone mat lined cookie sheet and bake in preheated oven for 25 minutes.
Melt the chocolate chips and spread onto the tops of cookies. One easy way to do this is to sprinkle the chocolate chips on top of the cookies right when they get out of the oven and let rest 5 minutes. Use the back of a spoon to evenly spread the chocolate onto the cookies. Chill briefly in refrigerator until chocolate has set.
