Coconut Creamy Fruit Salad

This fruit salad (like most fruit salads, right??) is very simple to throw together and oh so tasty. The use of avocados, mangoes, and bananas only adds to the extra creamy deliciousness.

Speaking of deliciousness: VeganMofo is still going strong!! But my google reader may not survive this one. It is so chock full of awesome vegan eats, it just may explode. Seriously, I have got a lot of catching up to do!

It is in hectic (and yummy) times like these, that a nice easy fruit salad is the perfect treat to whip up. So easy, so sweet, so good.

Coconut Creamy Fruit Salad

serves 4

Ingredients:

  • 2 avocados
  • 2 mangoes
  • 2 bananas
  • 2/3 cup coconut cream
  • 2-3 tsp agave nectar
  • zest of 1 lemon

Directions:

Prepare fruit by peeling, pitting and chopping into bite sized pieces and combining in medium sized bowl.

In smaller bowl, combine coconut cream, agave, and lemon zest until well mixed. Toss dressing onto fruit and serve.

Makes an amazing mid-day snack or dessert.

    I made this tonight…..I could not find coconut cream in my local asian market, but I did find cream of coconut…same thing only they add a little sugar to it..I only used 2 tablespoons…..it was sensational!!! Really wonderful! I would never have thought of using avocado in a fruit salad, but I guess it is fruti:) Thanks for the great recipe!

    Just wondering – does it stay alright like 5-8 hours later? Or does the coconut start getting abit iffy after a while? What I am trying to get at is, if i prepare this in the morning and carry it with me to work, can I have it in the evening as a snack?

      Hi Zenobia!

      Hmmm… good question, but I’m not quite sure as I’ve never tried it. I would think the coconut would be fine after that long, but possibly would worry about the banana or avocado lasting and still holding their texture. Might be worth a shot, though! :)

    If I only hadn’t just had guacamole for lunch I too could be eating fruit salad. The creamy dressing reminds me of one I used to get that had raspberry pureed into it and oh, was it good. Only I think lemon was a better idea with your combo. Looks scrumdeliumscious (Chitty Chitty Bang Bang anyone?).

      I know, me too! I even thought about adding chocolate, but I think that would have been a little too much of all things I love! Maybe not. :)

    i can’t remember the last time i had fruit salad. and with avocado?! never woulda thunk it. ;) that’s fantastically delicious! i love anything coconutty and i love all things mango and avocado. your fruit salad sounds like something i’d eat by the bowlful!
